really?

so...... matt got into gradschool for history!

so proud of him especially cause he got a TAship... :) my love is going to be a professor. i can see it already.

but.....  this means we'll be in florida for another 2 years. =/

ohhhhhhhhh here we go again, florida. round 3. wish me luck.

i'll eatchoo

so i've been using instagram for a long time now. probably since it started when i was still living in prague, over a year ago now. i am up to over 1,000 photos and am pretty obsessed with sharing my life with my friends. it mostly consists of food photos and my cat but whatever :)  the app is blowing up. if you wanna follow me my name is evestagram.

love this song. and that now after 3 months of free satellite sirius radio i'm only paying $37 for the next 6 months.

while we were planning for the baby shower(in 13 days!!!) my mom busted out some old shoes we used to wear. she labeled them with our names. look at eruch's. 


they're all so ridiculous. 

4 out of 5 kids shoes. she's missing mine :( she thinks maybe i didn't wear these kind.

the lady at the green market who sells all the local eggs loves christalyn and her preggo belly so she gives her quail eggs for free. and she gave me some to share :) 

my lunch yesterday was divine.

hard boiled quail eggs. so tiny and cute... top with olive oil and s&p!

it's been very rainy lately. 

i decided to change what the slate says whenever i think of something new.  "welcome, friend"




chicken udon noodle soup

i always seem to have cravings for noodle soup... wether it's thai or japanese. i finally made some of my own.

ingredients:

  • organic chicken tenders
  • chopped ginger(2-3 tbsp)
  • chopped garlic(2-3 big cloves)
  • 1 chili pepper chopped
  • 1 big shallot chopped
  • herb salt seasoning by a. vogel("herbamare asian blend" found at whole foods)
  • 1 box of chicken stock plus half of another box
  • half a head of cut up brocolli 
  • 1 bell pepper cut up
  • 1 package of udon noodles(pre cooked)
  • tamari(soy sauce)
  • sake(maybe 1/4 cup)
  • fish sauce(8 shakes, depending on your liking)
  • juice from half a lime
  • miso paste 1 tbsp(i used brown) 
toppings:
  • scallions
  • cilantro
  • siracha


-first i sauteed the chicken tenders for a few minutes in coconut oil and once i flipped them i added the ginger, garlic, chili pepper, and shallot
-i added herb salt seasoning to taste. once the chicken was cooked through, i set it aside and cut the chicken into bite size pieces.
-then i boiled the chicken stock and added brocolli and green pepper until they were tender but not too soft.
-set aside veggies
-boiled noodles 2 mins(that's all they take), turned the heat to low and added the tamari, fish sauce, sake, lime juice and miso paste(you have to take some of the broth in a small bowl and whisk the miso paste until it dissolves and add back into the pot)
-then i threw the chicken mixture into the pot and served
-top with scallions, cilantro, and siracha(til my nose runs)
SOOOO GOOD.

happy birthday(on april 27th) to my beautiful creature friend. you're 5 now :) and a little fat, but that's okay. i still love you.

we visited the morikami museum and gardens on wednesday. it was a really beautiful sunny afternoon and it had been so long since i'd be there.
