short ribs with mashed potatoes

so i recently felt like being an extra special girlfriend and surprising matt with dinner. this past week i kept him out of the kitchen and made him a meal that i knew he'd love. i don't ever buy pork(besides the occasional bacon) and i don't make roasts or ribs or any of that kind of thing. christalyn gave me a recipe  for making braised short ribs that i used.

basically i bought 5 short ribs from whole foods. i salted them and put them in a hot cast iron with coconut oil and seared them until they were browned on all sides. i took them out and put them into a deep roasting pan. then i added a tab of butter into the cast iron and sauteed carrots, celery, garlic, and onion for about 15 minutes until everything was softened. then i let them cool for a bit and added them to my food processor and pulses the veggies until they were almost a paste but still a little chunky.

the rest of the sauce making and oven directions are explained in the link i attached that i highly recommend using. one thing i did do though was add big chunks of celery and carrots to the sauce just to have some as a side.

this sauce turned out soo amazing. it was delicious to braise the ribs in and alongside the garlic mashed potatoes i made. i personally liked the sauce and mashed potatoes better than the meat.... short ribs can be pretty fatty, but matt liked it so that's all that matters. he was super happy :)

new years eve

this year for new years eve we stayed in and enjoyed eachothers company. we actually met 2 years ago on new years eve-so it was sort of an anniversary. we invited christalyn over for tuscan shrimp with white beans. it turned out amazing. we then played some cards, watched the ball drop, said hi to the neighbors, and then went to bed at 1:30. we both had to work the next day, and it felt so great not to be hungover.

it was such an easy meal to make. highly recommended if you want to try something new.


kisa fell asleep before midnite. loser.

new years day breakfast. go buy yourself pamela's pancake mix. it is so bomb you have no idea. it's wheat-free and gluten-free and all you do is add an egg and some water.


new years resolutions? no idea.
