stout chili

since everyone's in the fall mood, i got the instinct to make some chili the other day. i figured i'd post a photo or two and share my recipe. it's so easy. i love hearty meals like this where you need nothing but a bowl and a spoon.

i like to prep everything beforehand so there's not a lot of cutting to do in between adding this and that.

first i cut up-
1 bell pepper
1 sweet onion
1 chili pepper
1 jalopeno pepper
3 cloves of garlic
3 ears of corn off the cob

in a saute pan, i cook some ground beef in a little coconut oil until it's no longer pink. i add some salt and pepper. drain as much liquid out as possible and set aside. then in a big soup pot i add coconut oil and cumin and start cooking all the cutup veggies. when they're all full of flavor and slightly softened, i throw in the meat, and chili powder...

and then add-

1 can of kidney beans
1 can of black beans
1 large can of crushed tomatoes
1 baby can of tomato paste
1 cut up fresh tomato
a handful of fresh basil
1 can of stout beer(any dark beer will do)

let the pot sit at a simmer to let the beer reduce down. i continuously add random flavors... a dash of cinnamon, more cumin/salt... basically anything that i liked in my spice collection i added. after the chili was at the taste i liked, i put it on low for quite awhile. it probably was on the heat for 2 1/2 hours.

for all the toppings-
shredded extra sharp cheddar cheese
sour cream
scallions
cilantro
tomatoes
blue corn chips

taaahdaah. done.
