lentil haven or heaven or whatever you wanna call it.

my typical recipe for lentil soup recently went down the drain. w what changed? it's called red curry powder by spice island. :) just forget the tomato base and add tons of this and it's yum yum yum. okay so i've been getting asked about my recipe, so here it is:



for the soup:
  • butter and coconut oil
  • onions
  • garlic
  • celery
  • carrots
  • bell pepper  
  • fresh thyme and sage
  • salt, pepper, cumin, red curry powder, bay leaf
  • red or white wine
  • potatoes
  • veggie or chicken stock (or water)
  • red lentils 
for the topping:
  • tomatoes
  • avocado
  • scallions or chives
  • feta(in water preferably... it's always the best.)

cut everything up. add coconut oil and a tab of butter to a pot. saute onions and garlic for a few minutes. add the pepper, carrots, and celery. put in all the seasonings. get some color on the bottom of the pot and add in the wine. let it reduce. add the potatoes and the stock. let it come to a simmer and then put in the lentils. make sure to rinse the lentils before you cook them. after the lentils are in, just cover it for a little while if you'd like... stir every once and a while and then taste it to see if you need to add anything extra... i like a good kick, and this curry powder by spice island is awesome. 











when the soup is done and dished out... for some reason it's just not enough as is. i'm not really sure where i got this from, but i love to put tomatoes, avocado, scallions, and feta on top. it just goes really well with this soup... or any soup for that matter.
