my friend julien posted a blog link to a recipe of a soup he made and i immediately felt the need to make it as well. the blog it is from is smittenkitchen which i adore to begin with. anyhow, i took a bunch of pictures while making it that i want to share!
bunny rabbit carrots :) oh so cute...
ingredients:
about 2 lbs. of carrots(i had just under)
1 large onion
6-7 garlic cloves
grated ginger, 1-2 tablespoons. i used like 4.
a box(4 cups) of veg. broth, coconut oil to saute, and white miso paste.
and for the toppings- toasted sesame oil and chopped scallions
so basically... i used my food processor to chop things for the first time. the carrots were put into the slicer blade... and i processed the onions and garlic together. then i used the grater blade for the ginger. so awesome... as much as i love cutting, it was nice for once to utilize a new tool.
saute everything up, add broth, simmer for about 30 minutes... cool for 10, then food process the soup. at the end you take a little bit of it in a bowl and add about 1/4 cup(i added a bit more than that) of miso paste and whisk together then add back to the soup pot. after it's all blended and the miso is added i put in some salt, pepper, and red pepper flakes.

the more in depth recipe is at smittenkitchen.com if you're interested. i tweaked the recipe a bit by adding more ginger, more miso, and also some red pepper flakes to make it spicy cause that's how i do. this soup reminds me a lot of carrot ginger dressing.
