one of my favorite things to make(and eat)...

tabouli. tuh-boo-lee. it's a salad. my mom always made tabouli for us growing up, and it's something i make all the time now. there's just a few main ingredients, and you can add whatever else you like to spice it up.

  • bulgur wheat. it's a grain. you can also substitute couscous instead.
  • lemon juice
  • tomatoes
  • parsley
  • mint
  • olive oil
  • salt and pepper
you can be done at this point, but usually i also add onions, cucumbers, garlic, and peppers. it usually depends on what i have at home.

cook the bulgur or couscous from the package directions... and let cool. i put it in the fridge for atleast an hour, depending on how soon i want to eat it. during this time i've got all my veggies chopped up waiting. when the bulgur is no longer hot, i add all the veggies, the juice of 2 lemons depending on how much grain is cooked, some olive oil, and whatever seasonings i like. then i put it back in the fridge to cool some more and marinate in the juices.

not a lot of cooking is involved, just a good amount of chopping and mixing(and tasting).

it's really filling, but at the same time it's refreshing and light cause of the citrus.
