i cut the peppers in half lengthwise and scraped out the seeds with a spoon. i mixed up some cream cheese, raw sharp cheddar cheese, cut up thyme and parsley, and seasoned it with salt, pepper, and garlic powder. i filled the peppers with the mixture and threw 'em in the oven on '425 for 15-20 minutes. they turned out so soft like roasted peppers and so delicious. and spicy... just how i like everything.
