egg salad

my recipe for egg salad; 
-5-6 large organic eggs
-1 large tbsp of vegenaise
-a few squeezes of fresh lemon juice 
-2 ribs of celery
-a little chopped onion(but i'd rather put in chives if i have them around)
-fresh herbs such as parsley, basil, and thyme. 
-celery salt/salt, pepper
-head of organic iceberg lettuce or any thing you like to put it on. 



-place the eggs in cold water that is an inch above them
-bring the water just to a boil and turn off heat and cover the pot for 7 minutes.
-add the eggs to an ice bath for 5 minutes
-remove them from the water and deshell
-place them in a bowl, mash them a little, and add all the above ingredients 

the lemon really freshens it up. 


 today i put them in some lettuce because i didn't have any bread... and it's healthier. i know iceberg technically has no nutritional value but atleast it's mostly water intake.
